James Pan received his BS in Biochemistry and did graduate work for two years at UC Davis. For the past twenty-eight years, he has worked as a chemist in USDA Western Regional Research Center in Albany, California, focusing on food extrusion, high protein energy drinks, and pasta using non-conventional ingredients.
